These are so, so, so, so, so, so good and easy to make. I probably shouldn’t even post it as a recipe because you don’t really have to have a recipe, you just make them. But they are so good, easy, and a healthy version of fries that I had to post them. Enjoy!
Roasted Baby Red Potatoes
6-9 baby red potatoes (depending on how much you want)
drizzle of olive oil
Preheat oven to 400 degrees F.
Wash the baby red potatoes. Cut them into wedges. Spread them in an even layer on a baking sheet. Drizzle with olive oil (I pour a bit of oil into a cup, stick a fork in, and drizzle over using the fork tines). Sprinkle with rosemary and thyme.
Bake for 15-20 minutes, until browned.
