Strawberry Muffins

We have been enjoying the fruits of the valley we live in! We are still waiting on our own blueberry and raspberry bushes to produce so meanwhile we have hit up the local farmstand for our fresh berries.

I wasn’t sure how these muffins would turn out. Sometimes with larger chunks of fresh fruit it can get mushy and undercooked right around the fruit. I was pleasantly surprised that this did not have that trouble. While it was softer around the strawberry chunks there wasn’t any raw or mushy texture. I used a bit of brown sugar sprinkled on top (instead of the turbinado sugar), and was asked by my family members to please make them again so I’ll consider that a success. Enjoy!
